How do historians and history educators select what is relevant to ʺcountʺ as history?

History is written by the victorious. For example, I’m sure that in Japanese secondary schools, the Second World War does not cover a lot of what happened at Japanese POW camps. Also, I’m sure the United States has committed some pretty bad acts of violence over the course of the past century. In American history, great figures that are American (Thomas Edison, George Washington) are probably noted as “benevolent, innovative people”. However, in reality, it could be absolutely possible that Thomas Edison was a crafty man (who took other’s inventions) and that George Washington wasn’t a great president (or whatever). To me, a lot of the stuff that is going on in the Middle East right now will be written in history books as America being the white knight, saving these otherwise ‘helpless’ or ‘defenseless’ countries from violence and tyranny (and the politics and reasoning behind these wars, on the American side, will probably be played down).
